Crockpot White Chicken Chili

There is nothing better than enjoying a nice bowl of white chicken chili fresh out of the crockpot after a long day of leaf raking. This variation of a chili disguised as a soup in its brothy nature.

Not only is this chili delicious, but the ingredients also used are along the healthy side. Which is fantastic news if you would like to have another bowl. Today we won’t be using ingredients like cream cheese or heavy cream. Instead, we will use plain Greek yogurt that is high in protein and still gives the white chicken chili that creamy texture and delicious flavor.

The beautiful thing about making white chicken chili in the crock pot is how little prepping there is. Simply measure out and dice your ingredients, then drop them into the crockpot! I’m more of the type to cook on low for 6 hours, however, if you need it in 3, simply turn the crockpot to high. I enjoy allowing myself the time to take care of a few things outside while my chili cooks. That way, anytime I need to grab anything from inside the house, I have that scent of something to look forward to.

Ingredients for Crockpot White Chicken Chili


  • Chicken Breast. Typically, I use chicken for this dish, but you may also substitute with Turkey Breast. You may even use ground chicken or turkey, although I recommend cooking it before adding it to the crockpot.
  • Onion and Garlic. When making chili I’m very used to throwing every vegetable I have at it. If you would like to throw in bell peppers, diced sweet potato, Jalepeno, and so on. Go for it!
  • Diced Green Chilies. These are not very spicy at all and add all kinds of wonderful flavor to the dish.
  • Corn. I love putting corn in chili as it adds a hint of sweetness into the mix.
  • Northern Beans. The dish is white chicken chili, although you may substitute these with black beans, or any other of your favorite type.
  • Plain Greek Yogurt. Instead of using heavy cream or cream cheese, I went with a healthier option with additional protein and tangy flavor.
  • Lime Juice. Paired with the plain greek yogurt, limes will take the flavor off the map.
  • Spices. Cumin, Oregano, Chili Powder, Cayenne Pepper, Salt, and Ground Black Pepper is the perfect mix for this amazing dish.
  • Cilantro. If you enjoy cilantro, you will want to add it to the chili. If you are not a huge fan, chop it up and set it on the side.

How to Cook White Chicken Chili


For White Chicken Chile, Pre-heat a skillet on medium-high heat and add oil to coat. Then, sauté the Garlic and Onion until softened, about 3 Minutes. Then, Add Cumin, Organo, Chili Powder, Cayenne Pepper, Salt, and Pepper and cook for 30 Seconds, stirring constantly.

In a small bowl, add about 1 cup of Northern Beans and thoroughly mash them with a fork. This will help thicken the chili.

Transfer Onion and Garlic Mixture as well as the Mashed Northern Beans to the slow cooker along with the rest of the Whole Northern BeansCornGreen Chilies, and Chicken Breast.

Cover the slow cooker and cook on Low for 6 Hours or High for 3 Hours.

Step 6

When ready, remove the chicken and shred with 2 forks or meat claws.

Return the chicken to the slow cooker along with Lime JuiceCilantro, and Plain Greek Yogurt, then stir.

Step 8

Serve warm with toppings like Tortilla Chip, Cheese, Cilantro, Jalapeño, Avocado and more!

When the Crock Pot White Chicken Chili is ready to serve, you may pour it into a bowl add all the topping you love! I suggest Cilantro, Jalapeño and Avocado Slices as those are my favorites. Feel free to add cheese, sour cream or whatever else you love! Enjoy!
