My family and I love hand hamburgers and this burger patty recipe has been our go to recipe for years. There is nothing better than sitting outside on a perfect day listening to the sounds of summer. Lawn mowers, kids laughing, dogs barking, and the sizzling sounds and scents of burgers being cooked on your grill. Follow that up with a crisp refreshing drink and you be having yourself an enjoyable day.
Whether you make these burgers on the grill, griddle, smoker, or stove top, they will be delicious. Burgers are amazingly versatile and taste great no matter the cooking method. Personally, I love cooking burger patties on the griddle and getting that nice crust on the outside of them. A nice crunchy outer layer is a wonderful way to add texture and flavor to the burger.
When I make my burger patty recipe, I tend to make it the night before, this allows for all the flavors to meld together. This was rule I followed issued by the great Gordon Ramsey. Considering he has three Michelin stars; I think he might know a thing or two about good food!
Internal Temperatures for Ground Meat
According to the USDA, the minimum safe temperature for ground meat is 160°F, which is considered well done. Depending on the thickness or size of the burger patty, it typically takes 10 to 15 minutes to reach that temperature. It’s important to make sure that ground meat is cooked to a safe temperature to avoid getting seriously affected by a foodborne illness.
Personally, I cook all ground meat to their recommended temperatures unless I grind the meat myself. If I’ve ground up a New York Strip Steak, I will then consider cooking my burgers medium to medium-rare. Below is a list of internal temperatures as to prepare your burgers to your liking.

Ingredients for the Burger Patties
- Ground Beef: For this recipe I used 3lbs of ground beef that was 85% Lean.
- Flour: Since I’m allergic to wheat, I used Gluten-Free General-Purpose flour. Feel free to substitute this with your typical All-Purpose Flour.
- Egg Yolks: One egg yolk per pound is typically what I go with. When used with the flour, you will have yourself a fantastic binder to keep your patties together.
- Seasonings: As always with beef, I typically use Montreal Steak Seasoning. Always remember, a little goes a long way.
- Garlic: I usually use a garlic press to get a garlic paste that blends well with the beef.
- Dijon Mustard and Warcestershire Sauce: This blend of sauces make the burgers so tangy and flavorful, you will never make another beef burger without them.

How to make Burger Patties
Step 1
Get a mixing bowl and add the Ground Beef, Flour, Dijon Mustard, Garlic, Dijon Mustard, Montreal Steak Seasoning, and Egg Yolks. Mix thoroughly by hand, then place in the fridge for 2 – 24 hours. If you need to cook them right away, that’s fine too.
Step 2
Grab approximately 1 – 1-1/2 cups of the beef mixture and form them patties. You may stack them with parchment paper, plastic wrap, or wax paper; however they should not stick together.
Step 3
Preheat your preferred cooking method:
- Grill/Oven: 375°F – 400°F
- Griddle: Medium-Low
- Pan: Medium-Low
Step 4
Cook the burgers based on your preference. Depending on shape and size they should take approximately 6-8 minutes per side for well done. Once flipped, add the cheese to the cooked side of the burger.
Step 5
Once the burgers have completed cooking, toss the buns on the grill for a quick toasting.
Step 6
Add your preferred toppings and dig in!
Conclusion
Once you’re done cooking, you’re going to want to put some delicious toppings on them. Very recently we made an assortment of Refrigerator Pickles, which are so crunchy and flavorful they pair well with these burgers nicely. We also love to eat these with a little bit of Spicy Coleslaw, however if you would prefer to avoid the mayo, I would recommend Healthy Coleslaw recipe.
Here is a list of some toppings we like to put on our burgers:
- Cheeses: We love to try an assortment of cheeses that range from the classic American, Swiss, Provolone, and even Trader Joe’s Caramelized Onion Cheddar
- Lettuce: Green Leaf Lettuce, Iceburg, Spinach or a Spring Mix are all great choices.
- Onions: Fresh Red Onion, Fresh White Onion, or even Caramelized Onions pair fantastically.
- Buns: Brioche, Sesame Seed, Homemade, or in my case, Gluten-Free Buns are all great choices. I Recommend toasting them on the grill or in the oven prior to serving.
- Fresh Fruits: Since our garden is producing we love Garden Fresh Tomatoes, Cucumbers, and Peppers on our burgers. Always remember, when the seeds are on the inside, it’s a fruit!
- Condiments: We all love ketchup and mustard, heck even mixing them together is amazing. You could also get fancy with a Garlic Aioli or my personal favorite, Sir Kensington’s Chipotle Mayo
As I mentioned previously my family loves these burger patties. They’re so juicy, slightly tangy, and delicious. During the summer I tend to make them a lot and everyone that tries them enjoys them thoroughly. While I bounce between using the griddle and the grill, the reviews are always they same, they can’t get enough! Since they’re also so easy to throw together, they’re great for parties or last minute get togethers.
