There is nothing better than enjoying a nice bowl of white chicken chili fresh out of the crockpot after a long day of leaf raking. This variation of a chili disguised as a soup in its brothy nature.
Not only is this chili delicious, but the ingredients also used are along the healthy side. Which is fantastic news if you would like to have another bowl. Today we won't be using ingredients like cream cheese or heavy cream. Instead, we will use plain Greek yogurt that is high in protein and still gives the white chicken chili that creamy texture and delicious flavor.
The beautiful thing about making white chicken chili in the crock pot is how little prepping there is. Simply measure out and dice your ingredients, then drop them into the crockpot! I'm more of the type to cook on low for 6 hours, however, if you need it in 3, simply turn the crockpot to high. I enjoy allowing myself the time to take care of a few things outside while my chili cooks. That way, anytime I need to grab anything from inside the house, I have that scent of something to look forward to.
